Summertime is fast approaching, and it’s the perfect time of year for light layers, light beer, and light fare. For a low-carb spin on everyone’s Tuesday, night favorite try this perfect solution: “tacos” made with lean turkey meat and lettuce wraps!

Turkey “Tacos” Made With Lettuce Wraps

A quick Google search will give you tons of recipes for taco shell-less “tacos.” We liked this one from Gina Homolka, founder of skinnytaste.com.With this recipe, you can make 4 servings of 2 lettuce wraps each. This turkey taco lettuce wrap has an impressive 30 grams of protein per serving–with only 6 grams of carbs! You also get the benefit of tons of vitamins and minerals from the veggies, plus no grains, preservatives, or added sugar normally found in store bought taco shells.

  • 1-2 pounds of lean ground turkey
  • 1 teaspoon of garlic powder
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • 1 teaspoon chili powder
  • 1 teaspoon of paprika
  • 1/2 teaspoon of oregano
  • 1/2 small onion, minced
  • 2 tablespoons of bell pepper, minced
  • 3/4 cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from an Iceberg lettuce (Bibb lettuce also works well; Romaine lettuce leaves may work, but these tend to be on the thin side, so you may have taco explosions)

How to Put Them Together

Using a cast iron or nonstick skillet, brown your ground turkey meat fully, then add in your dry spices. Mix well. Next, add your minced onion, bell pepper, water, and tomato sauce, then simmer on low for 20 minutes while covered. When the meat is ready, scoop a generous amount into each washed and dried lettuce leaf (choose large ones). For some extra decadence, feel free to add some shredded cheese, a dollop of sour cream, or a spoonful guacamole.

Like any taco variation, this recipe is awesome not only because it’s tasty and good for you, but it’s also super versatile. It’s the perfect meal to have on the back porch with your family. Simply set up a taco station with all your favorite toppings spread out in bowls. Your kids can enjoy making their own. Yes, like normal tacos these can get a little messy…but of course, that’s why you’re eating outside, right? Serve with a cold drink, keep plenty of napkins handy, and enjoy!
